KOKO Drinks: Piña Colada Recipe

The Piña Colada is a cocktail made with rum, cream of coconut or coconut milk, and pineapple juice, usually served either blended or shaken with ice.

It may be garnished with either a pineapple wedge, maraschino cherry, or both. There are two versions of the drink, both originating in Puerto Rico.

Preparation and cooking time:
 

A tropical blend of rich coconut cream, white rum and tangy pineapple – serve with an umbrella for kitsch appeal.

Ingredients

  • 120ml pineapple juice
  • 60ml white rum
  • 60ml coconut cream
  • wedge of pineapple, to garnish (optional)


Method

  • STEP 1

    Pulse all the ingredients along with a handful of ice in a blender until smooth. Pour into a tall glass and garnish as you like.

For a frozen blended version Mix the juice, rum and coconut cream together and freeze in ice cube trays. Then whiz the frozen cubes (with a couple of ice cubes if you like) to a slushy consistency.
