Plantain has been a recipe for many great dishes, delicacies and snacks, be it unripe plantain or ripe ones. Unripe plantain is very rich in calcium which strengthen bones, encourages stronger muscles, nails, and teeth. This is why medical practitioners affirm that eating unripe plantain helps prevent diseases such as osteoporosis which involves the weakening of the bones and causes fractures.

Ingredients: 3 unripe plantains, A big bunch of Nigerian pumpkin leaves (or Frozen Spinach: 10 cubes), 1 medium fish (Mackerel), 1-2 teaspoons ground crayfish, 2 medium onions, Red palm Oil, Pepper and Salt (to taste), 2 big stock cubes
How To Cook:
Wash, peel and cut up the unripe plantain into smaller sizes. Put the plantain into the boiling water on fire and allow to cook for some minutes to soften. While it is cooking, rinse and chop pumpkin leaves into small pieces and set aside. In the case of frozen spinach, allow to defrost enough before chopping and squeeze out the extra water using a sieve.
Wash, cut and remove the fish intestines and set aside, grind the crayfish and pepper and set aside too (you can as well have this done before putting the plantain up for boiling). Add in the chopped onions, stock cubes, fish, ground crayfish (and other assorted things you want to add in, e.g cow skin, shrimp, etc.) and pepper to the plantain and add water to the same level as the contents of the pot.

Add in the red palm oil and salt to taste and let all boil together. Add the vegetables and leave to simmer. You may mash it a little or not at all (as you so decide). Once it has heated up, stir, turn off the heat and leave to stand for at least five minutes before serving. Your unripe plantain porridge is donePhotos Credit: Getty
