Ofada Fried Rice, The Perfect Dish For Detty December

Gone are those days when there are no lot of options when it comes to Ofada rice. Although the forever bestest dish (permit the word) is the boiled Ofada rice served plain with the great sauce, experiments and advancement has brought Ofada Fried Rice, Ofada Jollof Rice and other varieties of the lovely food.
Ofada rice is a special kind of African rice grown in Nigeria, unpolished and has its own unique delicious taste. It is also said to be healthier than polished rice as it contains more vitamins and minerals. With Ofada Fried rice, the nutrients only get better with the veggies that will be added.
Now that the end of the year festive periods are here and the Government had not opened the borders yet, don’t you think this is the best time to experiment and give your family a great treat in Ofada Fried Rice. Well, let’s just try it out! Though there are various methods to cook the Ofada Fried Rice (just like the polished fried rice), today, we will be going through the stir fry method.
Ingredients
Ofada rice, chunks of boneless goat meat and/or chicken, dried fish, 2 medium-sized bell peppers, carrots, onion, salt and black pepper to taste, seasoning cubes, garlic & ginger (either paste or powder), crayfish and vegetable oil.
How to cook
Boil Ofada rice, sieve out water before it is totally cooked and set aside. Cook goat meat until soft and set aside. Clean the dried fish and ensure to take out all the bones, chop onions, bell peppers and carrots into desired shapes and sizes and set aside. Grease large frying pan with vegetable oil over medium-high heat, add chopped onions and cook till translucent.

Add in chicken chunks, dried fish, garlic and ginger and stir fry till chicken is cooked through. Stir in the cooked goat meat, bell peppers and carrots, fry for about 5mins. Stir in the Ofada rice, seasoning cubes, salt and black pepper and mix thoroughly while frying for about 10mins. Mix in crayfish and leave to fry for about 2 mins.
