In my African foods sojourn, I have come across yet another dish – a dessert named Malva Pudding – that I know you will love to try out as the KOKOFoodie that you are. In this segment, exploration is our language and motto and it brings me so much joy to bring you varieties, away from the day to day rice, bean and Garri foods. Today, we are preparing Malva Pudding.
Malva pudding is a traditional South African dessert consisting of a pudding base covered in a creamy, sweet sauce made with water, cream, vanilla, butter, and sugar. The pudding is usually made from butter, sugar, eggs, apricot jam, milk, flour, and salt.Malva PuddingCape Town, South Africa brags about being the only place the best of the dish is produced but not anymore as we will be putting this out in our KOKOFoodies kitchens. Malva pudding is typically served warm, preferably with ice cream, whipped cream, or vanilla custard on the side. It is believed that the dish is named malva pudding after the Afrikaans word malva, meaning marshmallow, referring to the similarities between marshmallows and the pudding’s texture, although some say that the name is derived after the fact that the pudding used to contain Malvasia wine.

If cold and you want to serve it, reheat the dessert it in the oven at 160 degrees for 30minutes. This dish also freezes very well. If it does, simply defrost & reheat before serving. Serve with vanilla ice-cream OR hot custard.
Ingredients
For The Pudding
1/2 cup sugar (you can also use castor sugar), 1 cup cake flour, 1 cup milk, 1 egg, 1 tsp bicarbonate of soda, 1 tsp white wine vinegar, 1 heaped tbsp apricot jam, 1 tbsp butter (melted)
For The Sauce
1/4 cup butter, 1 cup cream, 1 cup milk, 1 cup sugar
How To Make
The Pudding
Beat or whip the sugar and eggs until thick and lemon coloured, then add the jelly (jam) and mix through. Add in the melted butter and vinegar to the wet mixture. Sieve, or simply mix together the flour, soda and salt then add the mixture with the milk to the egg mixture and beat all together. Pour the well mixed mixture into an oven-proof dish and bake until pudding is brown and well-risen – depending on your oven and oven dish for about 30-45 minutes.
The Sauce
In a saucepan, melt the butter and sugar.  Then add the cream and milk. At this point, keep it heat low. There will be sugar crystals that develop when you add the cream & milk, they will just melt with time.

Serving
