Garden Egg Stew And Rice Is Bae

Garden Egg Stew is a yummy Nigerian stew made with fresh garden eggs. Growing up, I didn’t like the idea of the stew, it seemed like something that would irritate me but when I tasted it, whao, I testified to the goodness of  the stew but have stilled not tasted it in the last 5 years. I look forward to trying it out soonest, so having it on the food segment today is a good reminder and motivation.
Ingredients:
 Garden egg, Fresh tomatoes, Fresh scotch bonnet pepper, Beef, Smoked fish, Palm oil, Salt, Seasoning cubes and Onion
How To Prepare:
Wash and boil garden eggs for 5 minutes then blend till smooth. Blend pepper, onion and tomatoes very roughly and set aside.Wash the beef and boil with cook with seasoning cubes, onions and salt for 6-10 minutes. While it is cooking, debone the fish, wash with warm salty water and set aside too.

In the main pot for the stew, heat up your oil and add in sliced onions to fry, stirring so it doesn’t get burnt for about 2 minutes. Add the blended pepper and tomatoes, then the garden egg and stir. Leave to fry for 1 minute, then throw in the boiled meat, then fish, stir and leave to fry on low heat for 5-10 more minutes. Okay yes, your garden egg stew is ready. The accompaniment for this stew is Rice, go ahead and enjoy the baeish dish.
