Garden Egg Stew is a yummy Nigerian stew made with fresh garden eggs. Growing up, I didn’t like the idea of the stew, it seemed like something that would irritate me but when I tasted it, whao, I testified to the goodness of the stew but have stilled not tasted it in the last 5 years. I look forward to trying it out soonest, so having it on the food segment today is a good reminder and motivation.
Ingredients: Garden egg, Fresh tomatoes, Fresh scotch bonnet pepper, Beef, Smoked fish, Palm oil, Salt, Seasoning cubes and Onion How To Prepare: Wash and boil garden eggs for 5 minutes then blend till smooth. Blend pepper, onion and tomatoes very roughly and set aside.Wash the beef and boil with cook with seasoning cubes, onions and salt for 6-10 minutes. In the main pot for the stew, heat up your oil and add in sliced onions to fry, stirring so it doesn’t get burnt for about 2 minutes. Add the blended pepper and tomatoes, then the garden egg and stir. Leave to fry for 1 minute, then throw in the boiled meat, then fish, stir and leave to fry on low heat for 5-10 more minutes. Okay yes, your garden egg stew is ready. The accompaniment for this stew is Rice, go ahead and enjoy the baeish dish.
